Ingredients

  • Coconut Milk, 1/2 can (225 g)
  • Celery, chopped, 1/2 cup (51 g)
  • Broccoli, chopped or diced, 1 cup (88 g)
  • Vegetable stock (Broth), 2 cups (470 g)
  • Black Pepper, 1/2 teaspoon (1 g)
  • Salt, 1/2 teaspoon (3 g)
  • Coconut cream, 4 tablespoons (60 g)
  • Coconut Oil, 2 tablespoons (26 g)
  • Sunflower seeds, 1/2 tablespoon (16 g)
  • Spring Onions (Scallions), 1 bunch (24 g)

Instructions

  1. Chop broccoli, celery and scallion.
  2. Place the stock in a saucepan and simmer on medium heat for 20 minutes until the stock reduces to almost half its volume. Once reduced, add in the celery and the broccoli and remove from the heat. Let sit for 10 minutes.
  3. In the meantime, in a skillet, warm half of the coconut oil and cook scallion for a couple of minutes. Turn off the heat.
  4. Place the stock with the broccoli and celery back on heat, add coconut milk, the cooked scallions, salt and pepper. Cook for 2-3 minutes.
  5. Transfer into a blender and process until smooth enough. Add coconut cream and the remaining coconut oil.
  6. Add sunflower seeds on the top and serve.

    • Hi, KetoSusie. It is often recommended to not try a keto diet if you are at high risk of cardiovascular or liver events from a diet high in fat like keto. I would, however, discuss it with your primary healthcare provider. If you decide that it is not for you, then you can switch over to our regular low-carbohydrate route. You can access this y deselecing the “keto” option from the “Dietary Needs” section of your profile, then generating a new menu.

    • Hi, Gin. If you need to watch your cholesterol, then the keto plan may be challenging, as many of these recipes are high in saturated fats. You may be better served by our regular low-carbohydrate route, which focuses on unsaturated fats and more vegetables. You can access this by deselecting keto in your profile, then generating a new menu.

    • Hi, Allhis (Gin). This is the major part of the meal, but you can have “free” vegetables as a side – these are raw greens, celery, mushrooms, turnip, kohlrabi, cucumber, and scallions (green onions).
