Ingredients
- 2 cups / 480 ml water
- 1 cup / 80 g shredded coconut, unsweetened
- ¼ cup / 60 g light coconut milk (not beverage)
- ⅓ cup / 55 g chia seeds
- 8 tsp / 40 ml honey, yacon or pure maple syrup, or coconut nectar
FOR KETO: Stevia and/or erythritol, or inulin to taste
- ¼ tsp. / ⅔ cinnamon
- ⅛ tsp. / ⅓ g nutmeg
- FOR NON-KETO: 1 cup / 240 ml fresh berries or:
frozen unsweetened berries + 1½ tsp. / 6 g Stevia or monk fruit sweetener
Directions
Heat water until hot, but not boiling. Add shredded coconut and water to a blender or food processor, and blend on high for several minutes until smooth. Pour through a mesh colander to remove the coconut pulp (save for later use). If desired, smaller pieces of coconut can be further filtered out by placing the strained mixture in a cheese cloth. Combine the coconut milk, chia seeds, honey/syrup, nutmeg, and cinnamon in a bowl, and stir well with a wooden spoon. Divide the mixture into 8 dessert dishes. Refrigerate for approximately 10 hours to allow seeds to expand and the pudding to chill and set. Top with berries to serve. If using strawberries, slice just before serving.

Hi BlendySun, and welcome. If you want to replace the shredded coconut with more light milk, I suggest to add another 1/4 cup of chia seeds.
Hello – I am newish here and I find this to be a sensible and delightful way to get back some of the health that I have lost over the years. I loved the sound of this healthy dessert alternative, and purchased my chia seeds. I forgot to get the coconut though, and living in a rural area I cannot find unsweetened coconut. I would like to know if I may be able to use light coconut milk in place of the coconut? I was tickled to find the Chia Seeds in our local store.

Hi, willin1. You can find chia seeds at any health-oriented shop, including Whole Foods Market or Trader Joe’s, and even warehouse-type stores such as CostCo, WalMart, or Target.

Hi, Ypreston. Yes, the pudding does need to be refrigerated. With regard to the lack of thickening, the color of the seeds does not generally make a difference. You can try keeping some of the coconut pulp in with the seeds, as this may help with thickening.
Just made this last night. I opted for the White Chai Seeds. They’ve been chilling for well over 10 hours…no change, no expansion. Does it matter which chia seeds you use? So bummed.
