Ingredients

  1. 4 small or medium (6-in / 15-cm) SWG* or whole grain/organic corn tortillas
  2. ¼ cup / 60 ml organic and/or grass-fed cottage cheese
  3. 1 cup / 9 oz / 270 g skinless chicken, roasted, cubed
  4. 1 medium onion, chopped
  5. ¼ cup / 45 g black beans, cooked or canned and drained

Directions

  1. Preheat your grill.
  2. Place 2 tortillas on the preheated grill and spread half of the cheese on each tortilla; top with chicken, onions, and black beans.
  3. Cover with the remaining 2 tortillas. Grill for about 5 minutes.
  4. When ready to serve, cut each quesadilla into quarters.
  5. You may wish to serve with your favorite salsa.

    • Hi, beedazy. The serving size is just a unit you can use to fit the recipe into your menu pattern – you can have more than one “serving” if it fits. The recipe makes a large amount because it assumes that you may have additional people dining with you. If not, you can cut the recipe down.

  1. Hi, Ninn. The “Fewer Servings” link takes you to a pop-up box with an adjusted list of ingredients, with the default being 2 servings. Can your screen reader link into pop-up boxes? If not, after you click on it (and if you want 2 servings), you can “select all” and paste into a word processing document to which your screen reader can respond.

  2. At the bottom of the “exchanges” info, it says “fewer or sometimes fewer servings”. I am blind and use a screen reader and am confused as to what this means. It does not appear to be a link to something else…help!

  3. Hi, madpecci. The serving is just a unit, and your particular menu pattern would let you have 2 at lunch, and 3 at dinner, as well as 1 for any snack – if you wanted to skip a snack to double up on another, that would be fine, too. You can definitely substitute yogurt for the cottage cheese.
    With regard to how to divide up the 1/4-cup sized ingredients, that would be 1/2 tablespoon for each serving.

  4. How do you divide 1/4 cup beans 8 ways. Is one ounce of chicken really going to satisfy your hunger. Sounds like it won’t be enough for me. I am already 10 lbs below my weight watchers goal to start with. Is this really a meal? 1/4 cup cottage cheese divided 8 ways? Can I substitute non-fat yogurt. For the cottage cheese? I am new to this program. I definitely need help with this program. I only want to loose about 4-5 lbs

  5. My tortilla shells seemed to be very large difficult to handle. I decided to put ingredients of half of the shell and then fold the shell in half, dry half on filling half. To brown both sides at the same time by putting it in a Forman grill. It did need more then 5 minutes however. I then cut the closed shell into pie shape pieces. I think the next time I will make them ahead and store them in a hot oven until I have made enough for everyone. My family loved them. I will definitely make again.
