Ingredients

  1. 15 Baby carrots
  2. 1/2 Sweet onion
  3. 1/3 Head cabbage
  4. 14 oz Diced canned tomatoes
  5. 3 oz Tomato paste
  6. 1 cup Lima beans
  7. 1/2 cup Organic quinoa, uncooked
  8. 30 oz Chicken stock, low-sodium
  9. 2 Chicken breasts

Directions

  1. Combine all ingredients but chicken and cook 20 minutes
  2. Add chicken and cook 20 more minutes
  3. Remove chicken and chop into bite size pieces
  4. Add chicken to soup
