Ingredients
- 15 Baby carrots
- 1/2 Sweet onion
- 1/3 Head cabbage
- 14 oz Diced canned tomatoes
- 3 oz Tomato paste
- 1 cup Lima beans
- 1/2 cup Organic quinoa, uncooked
- 30 oz Chicken stock, low-sodium
- 2 Chicken breasts
Directions
- Combine all ingredients but chicken and cook 20 minutes
- Add chicken and cook 20 more minutes
- Remove chicken and chop into bite size pieces
- Add chicken to soup
