Ingredients

  1. 3 oz / 85 g cooked or canned chicken, cut into bite-sized pieces
  2. 2 oz / 60 g whole grain pasta
  3. 1 cup / 90 g broccoli, chopped
  4. 1 Tbsp. / 14 g mayonnaise, omega-3, olive oil, or flaxseed-based
  5. 1 tsp. / 3 g onion, minced
  6. ¼ cup /30 g celery, chopped

Directions

  1. Set pasta to boil. When pasta is tender, remove from heat, drain, and cool.
  2. In the meantime, set broccoli to steam. When broccoli is just tender yet still green, remove from heat and set aside to cool.
  3. When pasta and broccoli have cooled, stir in chicken pieces, minced onion, celery, and mayonnaise.
