Ingredients

  1. 1 Tbsp / 14 ml olive oil
  2. 1 large onion, diced
  3. 3 chicken breasts, shredded
  4. 16-oz / 454-g jar salsa verde
  5. 14-oz / 400-g jar petite diced tomatoes
  6. 1 carrot, chopped
  7. 3 garlic cloves, minced
  8. 1 small bunch of cilantro, chopped

Directions

  1. Warm olive oil over medium-high heat in a three-quart lidded pot.
  2. Add onions to skillet, and sauté for 5 minutes.
  3. Add chicken, and sauté for 5 minutes
  4. Add remaining ingredients, cover, and simmer for 1 hour
