Ingredients
- 1 cup / 5 oz / 135 gm boneless, skinless chicken, cubed
- 4 Tbsp / 60 ml grapefruit juice
- 2 cups / 4 oz / 100 gm lettuce, shredded or torn
- 2 medium tomatoes, sliced
- 1 cucumber, julienned
- 1 carrot, sliced
- 1 tsp / 5 ml garlic paste
- 2 Tbsp / 30 ml olive oil
Directions
- Marinate chicken with ½ of the grapefruit juice, ground black pepper , salt and garlic paste. Set aside for 15 minutes.
- Grill chicken on charcoal or in a grill pan till tender.
- Arrange the lettuce, cucumber, carrots and tomatoes on a plate.Make dressing by crushing cumin seed in a mortar with olive oil, adding the remaining grapefruit juice, and mixing well.
- Top with chicken, drizzle with dressing, and serve immediately
- Serving Size: 1 cup
- Exchanges per Serving: 1 Protein, 1 Fat, 1 Veg

For newer recipes that have not yet been added into the system, you can use them to substitute for the main ingredient in your meal. You can also match up the exchanges visible at the end of each recipe and when you click on “Exchange mode” in the toolbar above your menu. It doesn’t need to be a perfect match to work.
Do you have any recipes for air fryer.
Hi, vivelaine. Any recipe that calls for frying, roasting, or dehydrating can be done in an airfryer. This includes meats, burgers, chips, and vegetables.

Hi, Venice02, and welcome! The “Serving Size”s here are actually just units to make fitting them into your menu easier – you are not necessarily limited to just 1. Compare the “Exchanges per Serving” to the totals allotted to you per meal and day, which you can see by clicking on “Exchange mode” in the toolbar above your menu (it doesn’t have to be a perfect match). Taking your Monday lunch as an example, you can have two cups of this recipe for your meal.
Hi, I’m absolutely new to all this and wondered if I can use Balsamic vinegar in salad dressing? How would I count this? I would like to use Olive Oil and Balsamic Vinegar if possible.
Hi, Tigger. Balsamic vinegar is absolutely allowed! It is a “free” food, meaning you can use it without worrying as to how it fits into your daily allottment of nutrients. Olive oil is a “fat exchange,” and you are definitely given at least one at each major meal.
All these recipes are fine, I mean good. But I am rubbish at
making the simplest of all. Is there anywhere I can get them ready prepared and just pop them in the microwave at home.

Hi, ,Trimclub2, and welcome! We favor whole food type dressings, such as olive oil, citrus juice and/or vinegar, and you can use your “fat” exchange for that, if you wish. If you like something creamier, yogurt or kefir can be a great addition (in those small amounts, they are “free” as well). You can also just use the juice/vinegar and seasonings in the “free” food list (see the personal Menu Planner for this button).
The recipe calls for one cup of chicken, then mix with the lettuce, tomatoes, ect…I thought that was your meal. Are you telling me that mixed with the lettuce and all,that your only suppose to eat one cup? That truly doesn’t seem right. Is that even enough to sustain life? Lol Did I misunderstand?
What is the portion size of a vegetable?
Hi, Dawn. A vegetable portion size is about 1 cup raw or 1/2 cup cooked, though some of the lighter leafy green vegetables (e.g., mustard and turnip greens) can also be counted in full cup portions when cooked.

I can’t have grapefruit because of my chloresterol meds. What can I sub?

Yes – it calls for very little, so it won’t make a nutritional difference.

Hi, George. Alternatives to grapefruit vary according to the recipe. In this one here, you can substitute lemon juice, and that would be fine.
Regarding peanut oil, we do not recommend it, as it is high in omega-6 fatty acids, of which the amounts are too high in the modern western diet. We favor extra-virgin olive oil, nut oils such as almond, hazelnut, or macadamia, and even chia, flax, and avocado oils.
What About coconut oil?

I’m a transplant patient and due to the meds I take, I can’t have any grapefruit product. Can you recommend an alternative. Also, I’ve a question regarding oils for cooking. Can you comment on peanut oil?

Can you use Lemon Juice from a fresh lemon instead?
It says to use grapefruit juice, But in the introduction it said don’t use Juice. Are you suppose to squeeze the grapefruit juice yourself from the whole fruit?
