Ingredients

  1. 4 cups / 960 ml chicken stock/broth
  2. 1 clove garlic, minced
  3. 2 tsp. / 4 g ginger root, minced
  4. Dash of salt or substitute
  5. 2 Tbsp. / 30 ml avocado or extra-virgin olive oil
  6. 1¼ cups / 175 g pasta, whole grain (cooked) or ribboned zucchini or spaqhetti squash
  7. 1 carrot, sliced and cooked until just tender
  8. 1 chicken breast (8 oz / 240 g), boiled, drained and cut into bite sized pieces
  9. 1 red chili
  10. 2 stalks spring onions, minced
  11. 1 omega-3 or pasture-raised egg, slightly beaten

Directions

  1. In large stockpot, bring the chicken stock to a rolling boil.
  2. Stir in the garlic and ginger; add salt or substitute, oil, pasta, and carrots; lower the heat and let simmer for about 5 minutes.
  3. Stir in the chicken, spring onions and chili.
  4. Turn the heat off and stir in the beaten egg, whisking briskly for 20 seconds.

Serve immediately.

  1. Yummy! Add the lime in your bowl if u like lime. I did several things wrong- needed 2 attempts. My errors- do cook noodles separately, they become mush in your broth. 1.5 cups of cooked noodles is about a quarter diameter of dry noodle product (not half a a bag) well those were the 2. It will be quick next time, as I know to get pasta going in parallel to broth. Then cut chicken, and get it boiling separate too. 3 pot meal but great after combined.

  2. even nicer with a handful of fresh chopped coriander and juice of one lime in the soup bowl before serving, also make your own chicken stock and open freeze the cooked chicken pieces for use in recipes like this and the cashew chicken wraps.

  3. Made this last night, quite apprehensive about adding the egg at the last minute but did anyway. It was wonderful! Unfortunately I didn’t have the chili or ginger to add but will make sure I do next time. Will probably be even better 🙂

  4. Hi to all. Any type of whole grain noodle will do – the point is to avoid refined products. Any sort of chili pepper will do, as well – they are all a source of capsaicin, a beneficial antioxidant.
    Regarding extra vegetables, it is just a serving suggestion and more vegetables are always recommended!

  5. Hi, Highlife. Brown rice pasta is pasta made from flour made from brown (whole) rice. It is found in health-oriented stores, and is increasingly found in regular supermarket as more and more people which to avoid wheat.

  6. I would use a whole chicken and make the stock first…save the chicken, defeat the stock and continue with the soup..you will have enough chicken for the soup and another dish! I WILL make it that way and update! Ozzie says we are soon going to get nutritional analysis on recipes…that will be a bonus!
