Ingredients
- ½ Tbsp. / 7 ml olive oil
- 1 clove garlic, chopped
- ½ Tbsp. / 3 gm ginger root, grated
- 1 small onion, chopped
- 2 chicken breasts cut into chunks
- ⅔ cup / 150 ml red wine
- Juice of 1 lemon
- 1½ cups / 360 ml water
- ½ cup / 55 gm carrots cut to bite-sized pieces
- ½ cup / 65 gm dried apricots cut to bite-sized pieces
Directions
- In a saucepot, heat the olive oil, stir in the garlic, and sauté for 2 seconds.
- Stir in the onions and continue sautéing for a few seconds more until the skins turn translucent. Add the ginger root and stir to blend well.
- Add the chicken pieces, a handful at a time, stirring after each addition. Reduce the heat to low, and simmer for about 5 minutes.
- Add salt and pepper if desired. Stir in the red wine and lemon juice and continue to simmer for 5 minutes more.
- Add the carrots and continue cooking for another 5 minutes. Stir in the apricots and water. Cover the saucepan with a heavy lid, and simmer for 10 more minutes.
You may wish to serve the stew with steamed brown rice (½ cup / 100 gm = 1 carb) and vegetables (½-1 cup / 90-180 gm = 1 carb).

I’m going to substitute Worcestershire sauce for the red wine. I just wanted to check the Worcestershire sauce I’ve got is ok..its ingredients are listed thus: barley malt vinegar,molasses,sugar,water,salt and then it’s the spices etc. Can I use it?

most recipes contain all kinds of spices, seasonings that I cannot have. My diet, unfortunately, uses no spices, no ginger, green peppers, pepper, garlic. This limits my diet. When I read a recipe and see that it contains these items, I eliminate them.\
2 chicken breast ; this would be 4 pieces of breast, correct. One chicken breast is the whole breast of one chicken. Correct.? Please advise, younger people may not realize th at a chicken only has one breast . When the breast is split, one would have two pieces. h. E L P.

It has to be 3 cups of water for 2 chicken breasts, doesn’t it.

I am trying this recipe, a little confused. Ingredients say 1 1/2 cups of water, in recipe 3 cups. So it is trial & error .Good luck

Hi, EloiseT. Organic, unsulphured apricots are available in health-oriented shops. Ginger is not a must – there are plenty of other flavors.
I will have to adjust this recipe, as Im allergic to the Sulphur used to dry Apricots and I HATE Ginger! Lol…..
