Ingredients

  1. 1 onion, chopped
  2. 1 16-oz can black beans, drained
  3. 1 16-oz can kidney beans, drained
  4. 1 8-oz can no-salt-added tomato sauce
  5. 2 5-oz cans diced tomatoes w/chilis
  6. 1 small packet taco seasoning
  7. 1 Tbsp cumin seeds
  8. 1 Tbsp chili powder
  9. 24 oz chicken breasts (approximately 3 whole breasts)
  10. ¼ cup cilantro/coriander, chopped

Directions

  1. Combine all ingredients except chicken and cilantro in crock pot. Place chicken on top and cover. Cook on low for 10 hours or on high for 6½ hours. Remove chicken and shred. Return to pot and stir. Top with cilantro before serving.

Serving size: 1¼ cup
