Ingredients
- 1 sprouted or 100% whole grain tortilla, toasted and cut into ½ strips
- 12 oz chicken breast, poached and shredded
- 2 cups Tomatoes, chopped
- 2 Carrots, chopped
- 1 Green pepper, chopped
- 2 Jalapeño peppers, chopped
- 1 Hot chili, chopped
- 4 cups Chicken broth, low sodium
- 2 tbsp. Chili powder
- 1½ tsps. Smoked paprika
- 1 tsp Cayenne
- 1½ tsps. Tumeric
- 1½ tsps. Cumin
- 1 Yellow onion, chopped
- 2 cloves Garlic
Directions
- Put all vegetables except onion and garlic in food processor and chop until only small pieces are left.
- Heat large pot with 1 tsp olive oil.
- Cook onion and garlic until translucent.
- Stir in spices, then add chopped vegetables, chicken broth and chicken.
- Cook for ½ hour.
- Top with Greek yogurt, lime wedge and toasted tortilla strips.
