Ingredients

  1. 1 sprouted or 100% whole grain tortilla, toasted and cut into ½ strips
  2. 12 oz chicken breast, poached and shredded
  3. 2 cups Tomatoes, chopped
  4. 2 Carrots, chopped
  5. 1 Green pepper, chopped
  6. 2 Jalapeño peppers, chopped
  7. 1 Hot chili, chopped
  8. 4 cups Chicken broth, low sodium
  9. 2 tbsp. Chili powder
  10. 1½ tsps. Smoked paprika
  11. 1 tsp Cayenne
  12. 1½ tsps. Tumeric
  13. 1½ tsps. Cumin
  14. 1 Yellow onion, chopped
  15. 2 cloves Garlic

Directions

  1. Put all vegetables except onion and garlic in food processor and chop until only small pieces are left.
  2. Heat large pot with 1 tsp olive oil.
  3. Cook onion and garlic until translucent.
  4. Stir in spices, then add chopped vegetables, chicken broth and chicken.
  5. Cook for ½ hour.
  6. Top with Greek yogurt, lime wedge and toasted tortilla strips.
