Ingredients

  1. 1 ½ cups 9-bean soup mix
  2. 30 oz. no salt added fat-free beef or chicken broth
  3. 1 extra-large onion or 2 medium onions, sliced
  4. 1 ½ cups of your favorites from the free vegetables list, chopped (optional)

Directions

  1. In a medium-to-large pot, soak the bean mix in water for at least 18 hours, covered. Drain, rinse well, and return the beans to the pot.
  2. Add remaining ingredients to the beans.
  3. On the stove, bring the mixture to a boil, then reduce to medium heat and cook for about 30 minutes or until the beans are tender.
  4. Finish in the oven at 250 °F for 6 hours.
