Ingredients
- 1 ½ cups 9-bean soup mix
- 30 oz. no salt added fat-free beef or chicken broth
- 1 extra-large onion or 2 medium onions, sliced
- 1 ½ cups of your favorites from the free vegetables list, chopped (optional)
Directions
- In a medium-to-large pot, soak the bean mix in water for at least 18 hours, covered. Drain, rinse well, and return the beans to the pot.
- Add remaining ingredients to the beans.
- On the stove, bring the mixture to a boil, then reduce to medium heat and cook for about 30 minutes or until the beans are tender.
- Finish in the oven at 250 °F for 6 hours.
