Ingredients

  1. 1 tsp olive oil
  2. 1 medium onion, diced
  3. 2-3 tsp chopped dried garlic or 2 fresh cloves, chopped
  4. ¾ cup uncooked quinoa
  5. 12 oz organic vegetable broth
  6. 1 tsp cumin
  7. ¼ tsp red pepper/cayenne
  8. 1 can 14-15 oz of black beans drained and rinsed
  9. 1 cup organic sweet corn (can be frozen)
  10. ¾ cup chopped cilantro
  11. opt. shredded low-fat cheese
  12. opt. low-fat sour cream
  13. opt. salsa
  14. opt. additional cilantro for garnish

Directions

  1. Heat olive oil in medium saucepan and add garlic and onion. Sauté until onion is translucent
  2. Add quinoa, veggie broth, cumin, red pepper, and salt and black pepper to saucepan.
  3. Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
  4. Stir in the corn and simmer for an additional 4-5 minutes.
  5. Add the black beans and cilantro and continue to simmer for 1-2 minutes until heated.
Serve with additional cilantro (free), shredded cheese (1 oz / 30 g = 1 protein exchange), sour cream (2 Tbsp / 30 ml = 1 fat exchange, and salsa (½ cup / 120 ml = 1 vegetable exchange).
