Ingredients
- 1 tsp olive oil
- 1 medium onion, diced
- 2-3 tsp chopped dried garlic or 2 fresh cloves, chopped
- ¾ cup uncooked quinoa
- 12 oz organic vegetable broth
- 1 tsp cumin
- ¼ tsp red pepper/cayenne
- 1 can 14-15 oz of black beans drained and rinsed
- 1 cup organic sweet corn (can be frozen)
- ¾ cup chopped cilantro
- opt. shredded low-fat cheese
- opt. low-fat sour cream
- opt. salsa
- opt. additional cilantro for garnish
Directions
- Heat olive oil in medium saucepan and add garlic and onion. Sauté until onion is translucent
- Add quinoa, veggie broth, cumin, red pepper, and salt and black pepper to saucepan.
- Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
- Stir in the corn and simmer for an additional 4-5 minutes.
- Add the black beans and cilantro and continue to simmer for 1-2 minutes until heated.
