Ingredients

  1. 6 cups bread, cubed (sprouted/100% whole grain regular or gluten-free)
  2. ¼ cup / 60 ml olive oil
  3. ½ cup / 80 gm chopped onion
  4. ½ cup / 50 gm chopped celery
  5. ½ cup / 35 gm chopped mushrooms
  6. 1 tsp. / 3 gm ground black pepper
  7. 1 tsp. / 0.7 gm ground sage or thyme
  8. 1 Tbsp. / 4 gm chopped fresh parsley or 1 tsp. dried leaves
  9. 1 cup / 240 ml low-sodium vegetable or chicken broth

Directions

  1. Preheat oven to 350F / 175C. Spray a 2-quart / 2 litter baking dish with non-cook spray.
  2. In a large skillet over medium heat, heat the oil, then add and sauté the onion, celery, and mushrooms, stirring occasionally, until the onion and celery pieces are soft, about 10 minutes.
  3. Stir in the pepper and sage, and cook for an additional 3 minutes.
  4. Place the bread cubes into a large bowl. Gradually pour the rest of the ingredients over the cubes and toss well, until all of the bread is coated.
  5. Gradually add the broth and mix lightly with fork to moisten the bread mixture.
  6. Pour in prepared baking dish, cover lightly with foil, and bake for 15 minutes.

  1. Hi, this is all new to me and so I have to go slow. BIG question – I cook only for myself since I live alone. how do I measure down the recipes just for myself instead of cooking for a large family??? What’s the key??? Otherwise I will be wasting lots of food.

  2. Why don’t you include calories and nutritional info? Would be most helpful and even other “free” calorie counting programs have that information. Very important info for those who may be diabetic or have high cholesterol. Please let me know if you plan to offer this in the future.

  5. This was really good. Loved for the simple fact I could control the seasoning, unlike the processed boxed junk you can buy in the store! If you chop the bread finer, it would make a great stuffing for mushrooms too!

  6. I am afraid I seem to have signed up to non UK ingredients what substitutes could be used ? also in UK many products such as organic ranges are very expensive and is a huge consideration . The staple food in our cupboards needs to be obtainable and affordable.
