Ingredients
- 4 cups cooked quinoa
- 1 large onion, chopped
- 2 ribs celery, chopped
- 1 small pkg carrots, shredded
- 2 tsp butter
- ½ cup flaked no-sugar-added coconut
- ¼ cup raisins
- Salt and cracked pepper to taste
Directions
- Saute onion, celery, and carrots together.
- Add the rest of the ingredients.
- Toss lightly.
- Refrigerate.
- Serve chilled!
