Ingredients

  1. 4 cups cooked quinoa
  2. 1 large onion, chopped
  3. 2 ribs celery, chopped
  4. 1 small pkg carrots, shredded
  5. 2 tsp butter
  6. ½ cup flaked no-sugar-added coconut
  7. ¼ cup raisins
  8. Salt and cracked pepper to taste

Directions

  1. Saute onion, celery, and carrots together.
  2. Add the rest of the ingredients.
  3. Toss lightly.
  4. Refrigerate.
  5. Serve chilled!
