Ingredients
- Bacon, strips, 1 package (446 g)
- Aubergine (Eggplant), 1 1/2 pounds (672 g)
- Heavy whipping cream, 1 cup (233 g)
- Butter, unsalted, 2 1/2 tablespoons (35 g)
- Garlic, 4 tbs cloves minced (20 g)
- White wine, 1 tablespoon (16 g)
- Lemon Juice, 1 tablespoon (15 g)
- Parmesan Cheese, 1 cup (97 g)
Instructions
- Cook bacon strips in a heavy-bottomed skillet over medium-high heat, flipping when necessary until strips are brown and crisp. Remove from the pan and drain on paper towels.
- Using the same skillet, cook the eggplant in the rendered bacon grease, over medium-high heat until the eggplant softens and absorbs the bacon grease. Add the minced garlic and sauté for one more minute.
- Add the butter to the eggplant in the hot pan and stir, making sure it is coated with the butter as it melts
- Pour the heavy cream into the pan then add the white wine and lemon juice. Stir while the liquid heats up then add the parmesan cheese and continue to stir until the cheese has been completely melted and incorporated into the cream sauce.
- Mix in half the bacon and serve the Alfredo Eggplant immediately with the remaining bacon sprinkled over-top.

This keto Its high fat low or no carbs in portions. If you notice it is heavy whipping cream or cream cheese not milk it uses almond milk. and you’ll notice the cheeses are low carb such like hard cheeses. Wines are small amount for cooking. And the alcohol evaporates out when cooked and i think it leaves a roasted or smoky flavor to the food. it may be best to drink reds dry is best AServing only not the whole bottle. Not appropriate anyway. Lol.
Our bodies will store carbs and sugars as Fat. But if you dont feed the body carbs or sugars it will start burning your weight FAT.
