Ingredients

  • Bacon, 7 slices (182 g)
  • Butter, unsalted, 1 tablespoon (14 g)
  • Heavy Cream, 1 cup (233 g)
  • Parmesan Cheese, 1/2 cup (49 g)
  • Olive Oil, 1/2 teaspoon (3 g)
  • Scallops, 3 units - 2 large or 5 small (90 g)
  • Table salt, 1 teaspoon (5 g)
  • Black Pepper, 1 teaspoon, ground (2 g)
  • Chives, 1 teaspoon (3 g)

Instructions

  1. Chop the bacon and chives.
  2. In a skillet, cook the bacon over medium heat until crisp. Transfer the bacon to a paper towel-lined plate to drain. Leave the grease in the skillet.
  3. Add butter, heavy cream, and parmesan cheese to the skillet with the bacon grease. Cook over medium heat until the sauce is reduced by half approximately.
  4. Stir in the cooked bacon. Season with salt and pepper.
  5. Reduce the heat to a minimum.
  6. In a separate pan, heat olive oil over medium-high heat. Season scallops with salt and pepper. Once the pan is hot, add the scallops and cook for 1-2 minutes, and turn over until golden-brown on both sides. Transfer into a paper towel-lined plate to drain.
  7. Serve the scallops over a layer of bacon cream sauce. Garnish with chives.
