Ingredients
- Bacon, 7 slices (182 g)
- Butter, unsalted, 1 tablespoon (14 g)
- Heavy Cream, 1 cup (233 g)
- Parmesan Cheese, 1/2 cup (49 g)
- Olive Oil, 1/2 teaspoon (3 g)
- Scallops, 3 units - 2 large or 5 small (90 g)
- Table salt, 1 teaspoon (5 g)
- Black Pepper, 1 teaspoon, ground (2 g)
- Chives, 1 teaspoon (3 g)
Instructions
- Chop the bacon and chives.
- In a skillet, cook the bacon over medium heat until crisp. Transfer the bacon to a paper towel-lined plate to drain. Leave the grease in the skillet.
- Add butter, heavy cream, and parmesan cheese to the skillet with the bacon grease. Cook over medium heat until the sauce is reduced by half approximately.
- Stir in the cooked bacon. Season with salt and pepper.
- Reduce the heat to a minimum.
- In a separate pan, heat olive oil over medium-high heat. Season scallops with salt and pepper. Once the pan is hot, add the scallops and cook for 1-2 minutes, and turn over until golden-brown on both sides. Transfer into a paper towel-lined plate to drain.
- Serve the scallops over a layer of bacon cream sauce. Garnish with chives.
