Ingredients
- ⅓ cup / 45 g macadamia nuts
- ⅓ cup / 120 g whole sugar cane syrup
- Pinch salt or substitute
- ¼ tsp / ½ g agar powder
- 1 tsp / 4 g vanilla extract
- 3 cups / 85 g crispy puffed whole/brown rice cereal
Directions
- Spray 10×10-in/25×25-cm (or similar-sized) baking pan with non-stick cooking spray.
- In a food processor or chopper, grind the macadamia nuts for approximately 5-15 minutes (depending on the strength of your equipment), until a smooth and buttery texture is achieved.
- In a 2-quart pan, blend together the macadamia butter with the next four ingredients, and cook over low heat until smooth. Take care to ensure the agar is completely dissolved, and that the mixture does not boil or bubble.
- Remove from heat, add cereal, and blend well.
- Press mixture into prepared pan.
- Allow to cool completely before cutting, preferably in a refrigerator.
- Can be frozen for long-term storage.

i made this the other day, I used gelatin instead of agar. I also added chia, pumpkin, sunflower seeds and goji berries. I substituted sugar cane syrup with rice malt syrup, only because I wasn’t sure where to purchase sugar cane syrup. these were very yummy.
Hi, corlley. Don’t worry about getting the expensive ingredients – if you just use whole, minimally processed foods (which can often be purchased in bulk and stored/frozen), you’ll be fine. Note that ingredients that can be stored often translate to food savings. For example, if you buy in more than single-week quantities even of the above healthy ingredients, this recipe would still come out to about $0.30 per bar, compared to $0.35 per readymade bar made with regular (refined, processed) ingredients.
I’m sorry, but there are a lot of things on here in recipies, I couldn’t afford to buy extra I am retired and not rich like agar, and the sugar well, I could probley get that.
