Ingredients

  1. 2 brown free range eggs
  2. 1 Tbsp. shredded cheese
  3. 1 pepper/onion
  4. 1 small tomato chopped
  5. Seasonings of choice

Directions

  1. Combine all ingredients but the oil in a bowl, beating until eggs are uniformly yellow.
  2. Warm oil in a non-stick skillet over medium-high heat. Pour in egg mixture, and cook until egg has set and cheese has melted, about 1-2 minutes.
