Ingredients
- 2 brown free range eggs
- 1 Tbsp. shredded cheese
- 1 pepper/onion
- 1 small tomato chopped
- Seasonings of choice
Directions
- Combine all ingredients but the oil in a bowl, beating until eggs are uniformly yellow.
- Warm oil in a non-stick skillet over medium-high heat. Pour in egg mixture, and cook until egg has set and cheese has melted, about 1-2 minutes.

Hi, Fran. Dairy isn’t “out” unless you need it to be out. We do favor organic pastured dairy, if you can get it.
I will try this today. How do we get the cheese into the omelet? I thought that dairy was “out”? Hopefully, this will stop my craving for something like this. Thanxs.
