Ingredients
- Avocado, 2 avocado (316 g)
- Raw Egg, 4 egg (172 g)
- Goat Cheese, 1 tbsp (25 g)
- Parsley, 1 Tablespoon (4 g)
- Table salt, 1 1/2 tsp (1 g)
- Black Pepper, 0.5 tsp, ground (1 g)
- Garlic Powder, 0.5 tsp (2 g)
Instructions
- Preheat the oven to 350°F.
- Cut the avocados in half and remove the pits. Scoop out about 1/3 of the meat from each half, creating a larger cavity.
- Place the avocado halves in a baking dish so that their tops are face up.
- Sprinkle each half with salt, pepper and garlic powder.
- Gently crack 1 egg on top of each half and sprinkle the cheese over the eggs.
- Bake for 12-15 minutes, until the egg thickens.
- Sprinkle with fresh parsley, chopped, and serve.

Hi, raneyg. First, you don’t really need to scoop anything out if you use a small avocado – removing the pit leaves a small enough space for the egg and cheese. Second, there are many recipes here that require avocado, as it is an important keto ingredient.
