Ingredients
- Green Beans, Fresh, 5 cups (555 g)
- Black olives, 20 olives (75 g)
- Balsamic Vinegar, 2 tbsp (32 g)
- Extra virgin olive oil, 4 Tbsp (60 g)
- Spring Onions (Scallions), 1 large (25 g)
- Kosher salt, 1/3 tsp (1 g)
- Black Pepper, 2 dash (0 g)
- Boiled Eggs, 4 (196 g)
- Mayonnaise, 2 tbsp (28 g)
Instructions
- Place the green beans in a pot and cover with water. Bring to boil, then cover and cook for about 6-8 minutes.
- Rinse the green beans under cold water, then drain.
- Chop scallions and slice boiled eggs.
- In a bowl, mix balsamic vinegar, oil, mayonnaise, salt and pepper. Add in the green beans, chopped scallions and olives.
- Mix well and add sliced eggs. Refrigerate and serve chilled or at room temperature.
