Ingredients
- Garlic, 2 teaspoons (6 g)
- Ground ginger, 2 teaspoons (6 g)
- Curry powder, 2 teaspoons (4 g)
- Red pepper, 1/2 teaspoon (1 g)
- Salt, 1/2 teaspoon (3 g)
- Black Pepper, 1 teaspoon (2 g)
- Lime juice, 1 teaspoon (15 g)
- Mackerel, Fresh, 2 fillets (224 g)
- Coriander (Cilantro) Leaves, 1 sprig (3 g)
- Spring Onions (Scallions), chopped, 1/2 cup (49 g)
- Coconut Milk, 11 oz (319 g)
- Coconut Oil, 1 tbsp (13 g)
Instructions
- In a pan heat a tablespoon of coconut oil and add the scallion. Fry until soft and translucent.
- Add ginger and garlic, along with the spices, and fry for about a minute. Pour in the coconut milk, salt, pepper and lime juice.
- Bring to a simmer, then add the fish.
- Allow the fish to cook for 10 minutes in the sauce or until it flakes easily. Serve with fresh cilantro.
