Ingredients
- 2 Tbsp extra virgin olive oil
- ½ tsp salt
- 2 cups quartered grape tomatoes
- ⅓ cup fresh cilantro
- 2 ½ cup chopped cucumber
- ⅓ cup fresh mint or basil
- 4 scallions
- 2 Tbsp garlic wine vinegar
- 2 Tbsp goat cheese
- ½ cup diced tomatoes
Directions
- Combine in food processor or blender. Leave a little chunky.
- Garnish with goat cheese and mint.
Serve cold. Makes four servings
Better on day two when flavors have permeated thoroughly but good on day one as well.
Can we leave the goat cheese and cilantro out? We do not like goat cheese and have no cilantro.
