Ingredients

  1. 1 lb / 454 g (1½ cup / 360 ml) cod or other white fish
  2. ½ cup / 120 ml white wine
  3. ½ cup / 120 ml water
  4. ½ cup / 120 ml onion, chopped
  5. 1 tsp / 5 ml oregano
  6. 1 Tbsp / 15 ml butter
  7. 1 Tbsp / 15 ml whole grain flour
  8. ½ cup / 120 ml milk
  9. Salt and ground black pepper to taste (optional)
  10. 1 Tbsp / 15 ml sherry
  11. ⅓ cup / 80 ml cheddar cheese, shredded
  12. ½ lb / 225 g (1 cup / 240 ml) cooked shrimp, shelled and deveined
  13. ⅓ cup / 80 ml whole grain breadcrumbs

Directions

  1. Preheat oven to 350°F. Spray a casserole dish with non-stick cooking spray.
  2. In a medium saucepan, add wine, water, onions, and oregano, and bring to a boil. Add cod and poach for 8 minutes. Drain and save stock, and set cod with onions aside.
  3. In the same saucepan, melt butter and whisk in flour. Then stir in milk and stock, and let cook until bubbly. Stir in cheese, sherry, salt and pepper and cook until cheese has melted completely, stirring continuously to avoid burning.
  4. Put cod and onion in the casserole dish, scatter shrimp over cod, pour sauce over fish, and sprinkle with breadcrumbs. Bake for 25 minutes.
Serve with brown rice (½ cup cooked = 1 carb serving) and a vegetable. The sherry really adds to this.
