Ingredients
- 1 cup / 145 gm raw almonds
- 1 cup / 150 gm dried figs
- 3 Tbsp. / 45 gm raw coconut butter
- ⅓ cup / 80 ml monk fruit (lo han guo) sweetener or Stevia
- 1 cup / 165 gm sliced strawberries
- 1 cup / 145 gm blackberries
- ½ cup / 75 gm cherries
- 1 Tbsp. / 15 gm sugar-free apricot butter or puree
Directions
- Make a piecrust by soaking the dried figs and almonds in water overnight in individual bowls.
- Remove the almonds and figs from the water (do not discard the water) and combine in a food processor to process until well mashed.
- Moisten the mixture by adding a small amount of soaking water. Pat the mixture in a deep-dish pie pan. Place the crust in the freezer for about 3 hours.
- In a bowl, combine the coconut butter with the sweetener.
- Spread this mixture over the frozen almond-fig crust. In a large bowl, toss the strawberries, cherries, and blackberries in apricot butter/puree, and spoon the mixture over the sweetened coconut butter layer.
- Refrigerate for at least 3 hours before slicing to serve.
Can I substitute maple syrup for the monk fruit/stevia?
Hi, PrincessJoJo. Maple syrup would make it notably higher in sugar – better than white sugar, but still sugar. If you use the same amount, a serving of the recipe would yield 2 carbohydrate exchanges instead of 1½.
I’m not all that fond of apricots. Is there another fruit puree you could suggest as an alternative.
Is it the apricot version of apple butter? I doubt that would be a good substitute because of all the spice, but maybe applesauce?
Hi, hwyla. Yes, it is the apricot version of apple butter – since the amount is so small, the spice might not be a detractor. The challenge with using apple sauce is that it is a bit more watery.

Apricot butter is like a preserve – so that would be a substitute.
Stevia syrup is the same as liquid Stevia. It is often sold in bottles. You can make it at home by mixing equal parts Stevia powder and water, and boiling for about 5 minutes.
I have looked at a few stores and unable to locate the stevia syrup. Does anyone have any suggestions on where to find it?
I have tried this and it is heavenly…even my husband loved it….its so refreshing as well and the fruit really gives it a boost.
