Ingredients

  1. 4 chicken breasts, 8 oz each
  2. Juice of 1 large orange
  3. Juice of 1 large lemon
  4. 1 tsp ginger powder
  5. 1 tsp crushed red chili pepper
  6. 4 Tbsp ground black pepper
  7. 2 Tbsp dried parsley
  8. 1 Tbsp dried basil
  9. 2 cloves garlic, minced
  10. 2 Tbsp olive oil
  11. Salt or substitute to taste

Directions

  1. Cut chicken into cubes or strips and rinse well under cold running water.
  2. In a large mixing bowl, combine all ingredients but olive oil with a wooden spoon.
  3. In a large frying pan, add oil and heat over medium-high heat. Once oil is hot, add chicken mix to the skillet.
  4. Toss to coat and let chicken cook until all juices dry up. Be sure to stir occasionally to prevent sticking.

Let stand for 5 minutes before serving.

Serving size: 4 oz of cooked chicken
