Ingredients
- ¼ cup wild or brown rice, uncooked
- ¼ cup kamut berries, uncooked
- ¼ cup spelt berries, uncooked
- ½ oz. pecans
- 1 garlic clove, finely chopped
- ½ medium onion, chopped
- 1 medium carrot, diced
- ½ bell pepper, chopped
- ¼ cup green peas
- ¼ cup corn
- 2 cups water
- 1 tsp olive oil
- Dash of salt
Directions
- Place all the grains in a strainer and wash them thoroughly under running water. Transfer to a pot and soak in water for a few hours, preferably overnight.
- Drain the water after a few hours or in the morning, and rinse the grains again. Add 2 cups of water and a dash of salt and bring to a boil. Reduce heat and cook for 1 hour or until the grains become tender and can be chewed without resistance.
- While cooking the grains, dry toast the pecans in a separate skillet. Then set aside. Using the same skillet, add oil and sauté garlic and onions until they start to turn a light golden brown.
- Then add the bell pepper and carrots. Close the lid until the vegetables become slightly tender. Then add in the corn and green peas. Add in the cooked grains and mix well. Cook them for another 2-3 minutes.
Transfer into bowls or plates and top with pecans before serving.
Serving size: ½-1 cup
The protein cubes there are just a serving suggestion. You can combine it with anything, including beans.
You should be able to get Kamut and Spelt berries in most stores where they sell grains. At least in Canada they are becoming more available in regular grocery stores. Try an all natural store.
Unfortunately, this picture is not what the recipe will look like because it is for a different recipe that has meat and chili peppers.
