Ingredients
- 1 cubed onion
- 2 cubed tomatoes
- 3 Tbsp / 45 ml olive oil
- 1 cubed zucchini
- 1 cubed bell pepper
- 3 Tbsp / 7½ gm chopped basil
- 2 whole skinless chicken breasts
- 2 boiled white potatoes
- 1 tsp / 2½ gm ground black pepper
- 1 Tbsp / 15 ml lemon juice
Directions
- Preheat oven on the "grill" or "broil" setting.
- In a bowl, place tomatoes, potatoes, zucchini, red bell pepper and onion. Drizzle 1 tablespoon / 15 ml olive oil and sprinkle salt and pepper. Toss well.
- Place coated vegetables on a baking sheet (preferably silicone or lined with silicone or baking parchment), and grill for 5 minutes. When grilled, remove from baking sheet and set aside.
- In a bowl, add remaining olive oil, salt, lemon juice and pepper. Mix well.
- Add the breast pieces to the mixture, and refrigerate for 20 minutes.
- Place marinated chicken on baking sheet, cover with baking parchment, and cook for 7-8 minutes on each side.
- Chop grilled vegetables and put them in a bowl with basil, salt and pepper. Toss well.
- Place chicken and vegetables into the platter and serve.

Hi, Jodie. We recommend baking parchment (preferably an ecological type, as it tends to not be coated with harmful chemicals).
I guess the potatoes are cubed also? it’s hard to tell, since the picture shows no cubing at all. I find the pictures to show different from the actual recipe on several I’ve tried so far, or just reading the recipe it’s different.
