Ingredients
- 1 Tbsp coconut oil
- 1 large onion (regular or sweet), chopped
- 4-5 mushrooms (any variety), chopped
- 2 quarts water
- 1 Tbsp chicken-style seasoning (vegetarian/vegan)
- 2 Tbsp brewers or nutritional yeast flakes
- 1/4 cup brown or wild rice
- 1/4 cup hulled barley
- 1/4 cup lentils, uncooked
- 2 lbs red potatoes, unpeeled (rinsed thoroughly), and cut into cubes
- 1/4 cup organic soy flour
- Salt or substitute to taste
- 1 tsp beef-style seasoning (vegetarian/vegan) or to taste
Directions
- Heat coconut oil in a saute pan.
- Add onion and mushrooms, and saute until tender.
- Add water, followed by the remaining ingredients other than salt/substitute and chicken-style seasoning. Cook for approximately 30 minutes or until lentils, rice, and potatoes are tender, stirring occasionally.
- Add salt or substitute and/or beef-style seasoning to taste.

Hi, Julia. We have many vegan recipes in our collection, and many are either without onions and mushrooms (or can be made without them). Just type “vegan” in the search box in the recipe section of the site, and all the recipes will pop up.
This is a recipe from a Clubmember, but taking a look at it, I’m guessing you could leave out the coconut oil (and sauteing of the onions and mushrooms), as well as the yeast and one of the chicken- or beef-style seasonings; you could probably just choose between the brown rice and hulled barley as well.
