Ingredients

  1. 4 cups / 1 L water
  2. 4 tsp / 20 ml chicken-like seasoning
  3. 2 large tomatoes chopped
  4. 1 medium stalk celery, chopped
  5. 1 medium onion, chopped
  6. 2 garlic cloves, minced
  7. 1 Tbsp / 14 ml fresh parsley chopped
  8. ½ tsp / 2 ml dried basil
  9. ¼ tsp / 1 ml salt
  10. 1 bay leaf
  11. ¼ cup / 60 ml green beans, cut
  12. 2 small zucchinis, sliced
  13. 2 medium carrots, chopped

Directions

  1. In a large saucepan heat water, vegetable broth, tomatoes, carrots, celery, onion, garlic, parsley, basil, salt, and bay leaf to boiling.
  2. Reduce heat. Cover and simmer 15 minutes.
  3. Stir in green beans and zucchini. Heat to boiling.
  4. Reduce heat. Cover and simmer for 10 or 15 minutes or until tender. Remove bay leaf.
Serve warm.
