Ingredients


    Jūn’

  1. 2 cups / 480 ml water
  2. ¼ cup / 20 g juniper berries, lightly crushed
  3. Optional seasonings*

  4. Tonic

  5. 1 Tbsp. / 15 ml cinchona bark extract
  6. ¼ cup / 60 ml fresh lime juice + slices of fresh lime for garnish
  7. 2 cups / 480 ml plain carbonated soda or mineral water, chilled

  9. 1 inch / 2½ cm square of cassia bark
  10. 1 inch / 2½ cm piece liquorice root
  11. 1 inch / 2½ cm piece lemon grass
  12. 1 inch / 2½ cm piece angelica root
  13. 1 Tbsp. / 7 g raw almonds, chopped
  14. 1 tsp. / 2 g black peppercorns, cracked
  15. ½ tsp. / 1 g lemon or lime zest
  16. ¼ tsp. / 1 g coriander seeds
  17. ¼ tsp. / 1 g ground orris root
  18. To make a mock mojito: 10 fresh mint leaves
  19. 4 tsp. / 20 g xylitol (optional)

Directions

  1. Combine first 4 ingredients plus sweetener (if desired) in a 1½-quart/liter lidded pot, and bring to a boil over high heat.
  2. Turn off heat, cover, and allow to steep for at least 30 minutes. Set aside to cool completely.
  3. When cooled, strain and add lime juice and carbonated water. Stir or shake with ice to combine./li>
  4. Serve in a quart/liter pitcher or cocktail glasses, with slices of lime for garnish.
