Ingredients
- Cheese, mozzarella, whole milk, 1/2 cup, shredded (56 g)
- Cheese, cream, 3 ounces (84 g)
- Almond flour, 1 1/4 cup (150 g)
- Raw Egg, 1 egg (43 g)
- Ground Beef, 16 oz (454 g)
- Onion, Fresh, 1/2 cup (79 g)
- Olives, 1/4 cup pitted and chopped (25 g)
- Cumin, 1 teaspoon (3 g)
- Paprika, 1 teaspoon (2 g)
- Olive Oil, 1 tablespoon (15 g)
Instructions
- Preheat oven to 425 degrees.
- In a pan over medium heat, cook the onions in 1-2 tbsp olive oil until slightly softened
- Add in the tender ground beef and break up the meat with a spatula. Season with the spices and cook until browned. Add olives
- In a bowl add mozzarella and cream cheese and microwave the mix for just one minute. Remove and stir well, then return the mix to the microwave for another minute. Stir everything well.
- Add the egg to mozzarella and cream cheese mixture and mix together well. Then add in the almond flour and mix well once more.
- The dough needs to be flat so roll the dough flat with a rolling pin or with a piece of plastic wrap on top and use a heavy bottle instead. Once you’ve rolled it totally flat, say about ¼” thick, use a bowl to cut circle shapes in the dough.
- Lay down on a lightly greased cooking sheet, parchment paper or a silicone baking mat
- lace a couple of spoonfuls of beef meat mixture into each circle on one half and then neatly fold the other half right over. Be certain to press down firmly on the edges in order to seal the meat
- Cook for 12 minutes

Can I substitute almond flour with coconut flour instead? It’s just what I already have but I don’t know if that changes the whole recipe.
Hi, diazmartinezgc. You can certainly give it a try. You would use 1/2 cup coconut flour, and increase the egg amount to 2, adding more as needed to make the dough pliable.
What kind of ground beef? The one the is more lean and less fat or vice versa?

It is not stated whether to use ripe or unripe olives. Do they have the same values?

Hi, marticia. The ripeness of the olives doesn’t matter – whatever you prefer. Both green and black have advantages. Regarding the dough, because this is not a glutenous dough, there is no goal for consistency other than a combination of the ingredients.
