Ingredients

  • Broccoli, 2 cups (184 g)
  • Zucchini, 1 cup (122 g)
  • 2 eggs (86 g)
  • Spring Onions (Scallions), 1 (13 g)
  • Almond flour, 1/3 Cup (36 g)
  • Baking powder, 1/2 tsp (2 g)
  • Fresh Basil, 2 tablespoons (6 g)
  • Olive Oil, 4 tablespoon (60 g)
  • Table salt, 1/3 teaspoon (1 g)
  • Black Pepper, 1/3 tsp, ground (1 g)
  • Cheddar Cheese, 1/2 cups (56 g)

Instructions

  1. Separate the florets from the broccoli stalk. Chop the scallions and basil.
  2. In a saucepan over medium high heat add broccoli and water. Steam for 5 minutes approximately, then drain excess water.
  3. Grate zucchini with a cheese grater, then drain excess water.
  4. In a bowl, combine cooked broccoli florets, cheese, eggs, scallions, almond flour, grated zucchini, salt and pepper and mix until creamy (you can use a food processor).
  5. Add olive oil to a frying pan over medium heat.
  6. Using hands, form mixture into small flat patties and place them in the pan.
  7. Fry each side for about 3 minutes, or until golden brown.
  8. Remove from pan and place on paper towel to absorb excess oil.

      • Hi, Clcondon15. You can use other ground nuts instead, or even 2 tablespoons of coconut flour (you may need to add another egg). If you don’t want to use the recipe at all, you can swap it out for something else. To swap recipes in your menu, click on the edit or crossout tool to the immediate right of a recipe you don’t want, then select a replacement from the pop-up list.

    1. Batter was way too soupy. Had to add more almond flour to shape into patties. Don’t know how much this altered nutrional content of recipe. Both recipes I had tried have been this way. Suggestions. I am accurately measuring everything.

    2. to make this healthier use coconut flour instead of almond.. almond flour is higher in omega 6 and is a tree nut (allergies) coconut flour requires you use less (1/4 of the amount of almond flou and cost half as much as almond flour.
