Ingredients
- Raw Egg, 2 large (100 g)
- Spinach, raw 2 cups (60 g) or frozen 1/3 cup (60 g)
- Butter, No Salt, 1 tablespoon (14 g)
- Table salt, 1 teaspoon (5 g)
- Black Pepper, 1 tsp, ground (2 g)
- Goat Cheese, 2 oz (57 g)
- Chives, 1 tsp chopped (1 g)
Instructions
- Cook the spinach
- Mix carefully all the ingredients
- Divide mixture between two muffin cups or ramekins
- Microwave for 2-3 minutes at medium heat

Guess I did something wrong—mine did not turn out like muffins. More like a souffle but still good. What gives it the muffin (breadlike) texture that I obviously did not get?
