Ingredients
- 8 oz / 225 g chicken (preferably organic, pastured), diced or cubed
- 1 qt / L very ripe tomatoes, chopped
- 1 medium onion, diced
- 1 cup / 100 g fresh mushrooms, diced
- 1 yellow sweet bell pepper, diced
- 1 chili pepper, chopped
- 1 tsp. / 2 g cumin powder
- 1 tsp. / 3 g chili powder
- ¼ cup fresh cilantro/coriander leaves, chopped (optional)
Directions
- In a lidded non-stick pan, warm oil over medium-high heat. Add onions and sauté until translucent, about 5 minutes.
- Add mushrooms and peppers and cook for 5 minutes.
- Add the chili, other seasonings, and chicken, and cook for 5 minutes, stirring regularly to ensure even coating and browning of the chicken.
- Reduce heat to low-medium, add tomatoes, and cook for 20 minutes or until chicken is cooked through. For soupy chili, cover while cooking.
