Ingredients

  1. 1 Tbsp olive oil
  2. 1 red onion, finely chopped
  3. 1 medium green pepper, finely chopped
  4. 1 celery rib, minced
  5. 4 garlic cloves
  6. 1 cup uncooked long-grain brown rice
  7. 1 28-oz can fire-roasted diced tomatoes/juice
  8. 4 cups dark red kidney beans, cooked or canned, drained
  9. 2 cups vegetable broth, no salt added
  10. 1 tsp dried thyme
  11. ½ tsp each filé powder and paprika
  12. ¼ tsp cayenne pepper

Directions

  1. Saute in skillet , onion, bell pepper, celery, and garlic in olive oil 3-5 min to soften.
  2. Transfer the sautéed mixture to a crockpot.
  3. Add next 7 ingredients, and cook on low for 8-10 hours .
Serve with chili sauce for an extra kick.
