Ingredients

  • Peppers, sweet, red, raw, 2 red bell pepper (230 g)
  • Ground Beef (85/15), 4 oz (108 g)
  • Water, 1 cup (240 g)
  • Raw Egg, 1 egg (43 g)
  • Olive Oil, 3 tablespoon (45 g)
  • Black Pepper, 1/4 tsp (1 g)
  • Parsley, 1 tbsp (4 g)
  • Cheese, cheddar 1/2 cup
  • Portobello Mushrooms, 4 ounces (116 g)
  • Onion, Fresh, 1/2 cup, chopped (80 g)
  • Table salt, 1/3 teaspoon (1 g)

Instructions

  1. Preheat oven to 350°F . Brush or mist 8x8-inch / 20x20-cm baking dish with olive oil.
  2. Heat a pan over moderate heat, then add oil and coat the pan. Stir in the mushrooms to coat in oil and cook in for 2-3 minutes.
  3. Add the onion and the beef to the pan, cooking for 2-3 minutes until the onions turn translucent, and beef turns lightly brown and the mushrooms have cooked.
  4. Once ready, remove and set aside.
  5. Cut peppers in half and clean out ribs and seeds.
  6. In a medium-sized bowl, combine egg, salt, black pepper and add the mushrooms and browned beef; blend together well.
  7. Place the cheese slices at the bottom of belly pepper and then add meat mixture to each bell pepper half.
  8. Place in baking dish and cover with the remaining cheese. Bake for 30 minutes, or until peppers are tender.
  9. Garnish with chopped fresh parsley, if desired.

    • Hi, Keenlee. Are you referring to gooseberry and ginger teas? Teas are considered “free” if they are from herbs or bags, and are sweetened only with a natural carbohydrate-free option like Stevia and/or erythritol.
      High-carbohydrate foods like puff pastry and buns are not considered to be keto-supportive.

  1. My supermarket does not carry portobello mushroom. Can I use any mushrooms? I follow strictly to 3 meals a day and I eat mangoes or oranges or grapes or pears or bananas for a snack. I drink Japanese roasted rice green tea. Am I doing the right thing? I missed my kimchi. Can I have kimchi? Please advise. Thank you.
