Ingredients

  1. ½ cup / 80 g very cold watermelon, cubed
  2. ½ cup / 85 g very cold honeydew melon and/or cantaloupe, sliced
  3. ¼ cup / 40 g feta or semi-soft goat cheese (preferably organic pastured), crumbledor or:
    • 2 Tbsp. / 15 g mixed nuts, chopped and lightly toasted
  4. ¼ red onion, thinly sliced
  5. ¼ tsp. / 3½ ml olive oil
  6. 1 tsp. / 5 ml lemon juice
  7. 1 tsp. / 5 ml balsamic vinegar
  8. 1 Tbsp. / 2 g fresh herbs, chopped (e.g. basil, dill—optional)
  9. 1-2 fresh lettuce leaves for garnish (optional)

Directions

  1. Place melon, cheese, and onion into a medium bowl. Combine well
  2. In a small bowl, whisk together vinegar, olive oil, lemon juice, and fresh herbs (if desired).
  3. Pour over melon/feta mixture just before serving.
  4. Serve on a bed of finely sliced lettuce, if desired.

If you want only this for lunch, you can have 3 servings as a complete meal substitute; otherwise, you can have a serving with a sandwich or small serving of an entree and starch.
