Ingredients
- ½ cup / 80 g very cold watermelon, cubed
- ½ cup / 85 g very cold honeydew melon and/or cantaloupe, sliced
- ¼ cup / 40 g feta or semi-soft goat cheese (preferably organic pastured), crumbledor or:
- 2 Tbsp. / 15 g mixed nuts, chopped and lightly toasted
- ¼ red onion, thinly sliced
- ¼ tsp. / 3½ ml olive oil
- 1 tsp. / 5 ml lemon juice
- 1 tsp. / 5 ml balsamic vinegar
- 1 Tbsp. / 2 g fresh herbs, chopped (e.g. basil, dill—optional)
- 1-2 fresh lettuce leaves for garnish (optional)
Directions
- Place melon, cheese, and onion into a medium bowl. Combine well
- In a small bowl, whisk together vinegar, olive oil, lemon juice, and fresh herbs (if desired).
- Pour over melon/feta mixture just before serving.
- Serve on a bed of finely sliced lettuce, if desired.
