Ingredients

  • Cauliflower, 1 head small (4" dia.) (265 g)
  • Jalapeno Pepper (Hot), 1 jalapeno (15 g)
  • Bell Pepper, red, 1/2 pepper (77 g)
  • Bell Pepper, green, 1/4 pepper (30 g)
  • Parsley, 1 tsp (0 g)
  • Garlic, 2 garlic clove (8 g)
  • Oregano, 1 teaspoon (3 g)
  • Cheddar cheese, 1 1/2 cup, shredded (170 g)
  • Sour cream, 1 oz (28 g)
  • Ground Beef, 1/2 pound (227 g)
  • Ghee, 1 tablespoon (16 g)

Instructions

  1. Pre-heat oven to 350°F (175°C).
  2. Chop the bell peppers.
  3. In a skillet, melt ghee, then brown the ground meat over medium-high heat. When browned but not cooked through, remove from heat and set aside in a large-sized mixing bowl.
  4. Use a food processor or grater to chop (or grate) the cauliflower florets into rice-sized bits.
  5. Add to the mixing bowl the meat along with the bell peppers, jalapeño, garlic, parsley, oregano and half of the shredded cheese.
  6. Mix well and spoon into a lightly greased oven pan.
  7. Sprinkle the remaining cheese on top and place, uncovered, on the middle rack of the preheated oven. Bake for 1 hour.
  8. Serve with a dollop of sour cream.

  1. Hi, I am allergic to eggs and egg products. Are there any menu substitutions for all the eggs presented in the breakfast menu?
    I find this quite a lot in just about every keto plan I’ve looked into.
    Also, any suggestions for an egg substitute in the keto bread recipes I’ve seen around?
