Ingredients

  1. 8 oz Organic uncured turkey sausage
  2. 1 tsp Olive oil
  3. 8 oz Mushrooms sliced
  4. ¼ cup Scallions (spring/green onions) sliced
  5. ¼ cup Swiss cheese, preferably pastured, shredded
  6. 5 Eggs, pastured or omega-3
  7. 3 Egg whites
  8. 1 cup Skim milk

Directions

  1. Preheat oven to 350°F / 175°C.
  2. Prepare a 12-cup muffin tin with non-stick cooking spray or olive oil from a mister.
  3. Heat a large nonstick skillet over medium-high heat. Add sausage and cook until golden brown, 6 to 8 minutes.
  4. Transfer to a bowl to cool.
  5. Add oil to the pan. Add mushrooms and cook, stirring often, until golden brown, 5 to 7 minutes.
  6. Transfer mushrooms to the bowl with the sausage. Let cool for 5 minutes.
  7. Stir in scallions, cheese and pepper.
  8. Whisk eggs, egg whites and milk in a medium bowl.
  9. Divide the egg mixture evenly among the prepared muffin cups. Sprinkle a heaping tablespoon of the sausage mixture into each cup.
  10. Bake until the tops are just beginning to brown, 25 minutes. Let cool on a wire rack for 5 minutes.
  11. Place a rack on top of the pan, flip it over and turn the quiches out onto the rack.
  12. Turn upright and let cool completely.

  1. Almost to the end of my 1st week and I am so glad I joined the Trim down club.
    I have already lost some weight and the meals are very tasty and everything I have
    has been worth the time spent . I must admit I have had to run to the grocery store
    more than once ! P.S. I even feel better .
