Ingredients

  • Egg, 2 eggs (86 g)
  • Spinach, frozen, 2 cups (302 g)
  • Mushrooms, fresh, 1/2 cup (51 g)
  • Bell pepper, green, 1 small (74 g)
  • Cheddar cheese, 1 cup, diced (132 g)
  • Table salt, 1 teaspoon (5 g)
  • Olive Oil, 2 tablespoons (30 g)
  • Bacon, 6 slices (156 g)
  • Spring onions (scallions), 1/3 cup (32 g)
  • Black Pepper, 1/2 teaspoon (1 g)
  • Egg White, 4 egg whites (120 g)

Instructions

  1. Preheat oven to 375°F (180°C).
  2. Chop scallion and bell pepper; dice the mushrooms and cheddar cheese.
  3. In a skillet, heat the olive oil then saute mushrooms, scallion, and bell pepper for few minutes over medium heat, until peppers are tender.
  4. Whisk the eggs and the eggs' whites and add salt and pepper, to taste.
  5. In a greased baking sheet add a layer of vegetables and put spinach on top.
  6. Pour the egg mixture on the vegetables.
  7. Add bacon and cheese and bake for 35 minutes.
