Ingredients
- Egg, 2 eggs (86 g)
- Spinach, frozen, 2 cups (302 g)
- Mushrooms, fresh, 1/2 cup (51 g)
- Bell pepper, green, 1 small (74 g)
- Cheddar cheese, 1 cup, diced (132 g)
- Table salt, 1 teaspoon (5 g)
- Olive Oil, 2 tablespoons (30 g)
- Bacon, 6 slices (156 g)
- Spring onions (scallions), 1/3 cup (32 g)
- Black Pepper, 1/2 teaspoon (1 g)
- Egg White, 4 egg whites (120 g)
Instructions
- Preheat oven to 375°F (180°C).
- Chop scallion and bell pepper; dice the mushrooms and cheddar cheese.
- In a skillet, heat the olive oil then saute mushrooms, scallion, and bell pepper for few minutes over medium heat, until peppers are tender.
- Whisk the eggs and the eggs' whites and add salt and pepper, to taste.
- In a greased baking sheet add a layer of vegetables and put spinach on top.
- Pour the egg mixture on the vegetables.
- Add bacon and cheese and bake for 35 minutes.
