Ingredients

  1. 1 Egg
  2. 1 Egg white
  3. 1 cup Mushroom
  4. 1 cup Mixed green leafy vegetables (i.e. kale, spinach, chard, collards)
  5. ⅛ cup Cheddar cheese

Directions

  1. Sauté mushrooms in nonstick pan until soft.
  2. Add greens until wilted.
  3. Add egg and egg whites.
  4. Sprinkle with cheese.
  5. Cook over low heat until the egg is cooked through.
  6. Fold in half and serve.
