Ingredients
- 1 Egg
- 1 Egg white
- 1 cup Mushroom
- 1 cup Mixed green leafy vegetables (i.e. kale, spinach, chard, collards)
- ⅛ cup Cheddar cheese
Directions
- Sauté mushrooms in nonstick pan until soft.
- Add greens until wilted.
- Add egg and egg whites.
- Sprinkle with cheese.
- Cook over low heat until the egg is cooked through.
- Fold in half and serve.
