Ingredients
- 4 cups thinly sliced Napa (Chinese) cabbage
- 1 large carrot, peeled and coarsely grated
- 1 Tbsp. chopped fresh dill
- 2 Tbsp. olive oil
- ¼ cup lemon juice
- Salt and pepper to taste
- 2 Clementine or Mandarin oranges, peeled and segmented
- ¼ cup shelled unsalted sunflower seeds
- 1 tsp. flaxseeds
Directions
- In a medium bowl, toss together cabbage, carrot, and dill.
- In a small bowl, whisk together olive oil, lemon juice, salt and pepper. Pour over cabbage mixture and toss well to coat.
- Stir in citrus segments and sunflower seeds, and set aside at room temperature for 15 minutes before serving.
Serving size: 1¼ cups

It’s so hot here in UK I couldn’t find anything to have for lunch so I looked for a cold salad dish and I found this. Goes perfectly with my turkey. Thank you!
