Ingredients

  1. 4 cups thinly sliced Napa (Chinese) cabbage
  2. 1 large carrot, peeled and coarsely grated
  3. 1 Tbsp. chopped fresh dill
  4. 2 Tbsp. olive oil
  5. ¼ cup lemon juice
  6. Salt and pepper to taste
  7. 2 Clementine or Mandarin oranges, peeled and segmented
  8. ¼ cup shelled unsalted sunflower seeds
  9. 1 tsp. flaxseeds

Directions

  1. In a medium bowl, toss together cabbage, carrot, and dill.
  2. In a small bowl, whisk together olive oil, lemon juice, salt and pepper. Pour over cabbage mixture and toss well to coat.
  3. Stir in citrus segments and sunflower seeds, and set aside at room temperature for 15 minutes before serving.
