Ingredients

  1. 15 Medjool dates
  2. ⅔ cup / 160 ml salted peanuts
  3. ¼ cup / 60 ml finely-ground unsweetened coconut, toasted (optional)

Directions

  1. Pit dates  (if not already pitted).
  2. Put ingredients in a blender and it will start to form a ball.
  3. Using rounded teaspoons (about 8 ml) of the mixture at a time, form balls.
  4. Either flatten the balls with a fork into criss-cross patterns, or leave in ball form and roll in toasted coconut.
  5. Chill for several hours, and store in the refrigerator or freezer.
