Ingredients
- ¼ cup / 40 g oats, steel-cut, uncooked
- ¼ cup / 60 g organic pastured cottage cheese or unsalted fermented soy curd ‘cheese’
- 1 egg, pastured or omega-3 or ¼ cup flax seed gel
- 1 tsp. / 5 ml lemon juice
- 1 tsp. / 5 g organic pastured butter or light olive or macadamia nut oil
Directions
- In a food processor, blend the oats, cheese, egg or gel, and lemon juice.
- Heat a skillet over medium heat. Swirl in the butter or oil around the pan starting from the middle going outwards.
- Pour in a small amount of batter, depending on your favored size. When the top bubbles and the bottom of the pancake has browned, flip the pancake. The pancakes are done when both sides are completely brown.

Hi, Bchappell25. There is no reference because we tend to focus on whole foods, and oat bran is more like a nutritional supplement than a food (and not a whole food, of course). However, it does have its advantages, and you are of course welcome to use it – for this recipe, you can make a 1-for-1 switch.
Can I use oat bran for this recipe? I cannot find any reference to oat bran anywhere in this programme and it is something I use regularly.

Hi, Freda. Steel-cut oats are non-instant oats, that are the closest thing to truly whole oats currently on the market. The next best would be “rolled” oats.

Hi, NowColorado. We recommend that all soy be organic (aka non-GMO) for exactly that reason. We also recommend fermented and/or sprouted because together, these factors make soy a good food for most people. Note that the “foods to avoid” are the most unhealthy versions of very popular foods, and they serve as examples that one doesn’t not need to give up favorite foods, just upgrade and optimize them.
why does this recipe call for “soy curd” when soy is one of the #5 foods NEVER TO EAT?
Hi, all. The oats are uncooked. We recommend steel cut whole oats, rather than the ‘quick’ or ‘instant’ type.

Tried these pancakes but is this a one serving recipe? Pancakes were good. I topped w/blueberries and one squirt of real cream. I, too am finding the directions somewhat incomplete and w/lots of items I’d never bought before in some recipes.
