Ingredients
- 2 large Yukon gold potatoes
- 2 tsp of olive oil
- Sea salt to taste
- 2 teaspoons of chili powder
- 1 red bell pepper, roughly chopped
- 1 medium red onion, roughly chopped
- Ground black pepper to taste
- 1 large beefsteak tomato
- 4 scallions (white and green parts)
- ½ cup of cilantro
- 1 tablespoon of lime juice
- 1 tablespoon of diced jalapeno
- 2 teaspoons of hot smoked paprika
Smoky Salsa
Directions
- Preheat oven to 375°F.
- Dice potatoes into 1-inch pieces.
- On a large, rimmed sheet pan, toss the potatoes with the olive oil, salt, black pepper and chili powder. Stir well to combine. Bake for 15 minutes, and then add the red pepper and onion. Bake for an additional 8-10 minutes.
- While the vegetables are roasting, start the salsa.
Smoky Salsa
Place all of the salsa ingredients in a blender or food processor and process to desired consistency. Serve with the roasted vegetables.
