Paleo Baked Beets with Fennel

Ingredients

  1. 2 large Beets
  2. 1 bulb Fennel
  3. ½ Orange (optional)
  4. 2 Tbsp Coconut oil or organic pastured butter

Directions

  1. Preheat oven to 375 °F.
  2. Peel beets with vegetable peeler, and chop them into 1 inch cubes.
  3. Chop the tops off of the fennel bulb, slice the bulb into ¼ inch strips.
  4. Slice the orange into ½ inch pieces or use segments, if desired.
  5. Top the beets, fennel, and orange with the melted oil or butter, and toss to combine.
  6. Spread evenly in an oven-safe dish, and bake for 30-40 minutes or until the beets are fork-tender.
