Ingredients

  1. 3 Yukon gold potatoes roughly chunked
  2. 2 large onions roughly chunked
  3. 2 cups ANY assorted vegetable you like
  4. 2 tbs coconut oil
  5. ¼ c Parmesan cheese
  6. 1 tsp salt
  7. 1 tsp pepper

Directions

  1. In a large bowl, cut up vegetables into bite sized chunks.
  2. Drizzle coconut oil over them, sprinkle Parmesan cheese over them, and toss them onto a cookie sheet with sides, Broil 500* from 20-30 minutes until brown and wonderful!
