Ingredients

  1. 1 cup / 80 g rolled old fashioned gluten-free oats
  2. 1½ cups / 340 ml honey or coconut sugar syrup/nectar
  3. 8 oz / 230 g peanut butter
  4. ¼ cup / 20 g cocoa powder
  5. ¼ tsp / 1½ g salt
  6. ½ cup / 84 g semi-sweet real chocolate chips
  7. 1 tsp. / 5 ml vanilla
  8. 1 cup / 80 g unsweetened shredded coconut
  9. 1 tsp. / 5 ml organic canola/rapeseed, olive, or nut oil

Directions

  1. Preheat oven to 350°F / 175°C. Brush cookie sheet with oil.
  2. Mix all ingredients together.
  3. Drop tablespoon-size balls onto greased cookie sheet.
  4. Bake in preheated oven for 12 minutes.

    • Hi, rogerkathy. I’m sorry to read that 🙁 This recipe was submitted by a Clubmember, so it wasn’t tested by our team. That amount of honey does seem a bit high – perhaps next time try just half that amount (?)
