Ingredients
- 1 cup / 80 g rolled old fashioned gluten-free oats
- 1½ cups / 340 ml honey or coconut sugar syrup/nectar
- 8 oz / 230 g peanut butter
- ¼ cup / 20 g cocoa powder
- ¼ tsp / 1½ g salt
- ½ cup / 84 g semi-sweet real chocolate chips
- 1 tsp. / 5 ml vanilla
- 1 cup / 80 g unsweetened shredded coconut
- 1 tsp. / 5 ml organic canola/rapeseed, olive, or nut oil
Directions
- Preheat oven to 350°F / 175°C. Brush cookie sheet with oil.
- Mix all ingredients together.
- Drop tablespoon-size balls onto greased cookie sheet.
- Bake in preheated oven for 12 minutes.

I ended up with a gooey mess! Is the honey seriously 1 1/2 cups?

Is the coconut suagar granular or syrup?

I find it hard to believe the cookies have 1 C Oats, 8 oz peanut butter, and 1 c coconut and it only makes two cookies. There must be something I am missing.
Hi, Debbie. A “serving size” is 2 cookies. The recipe makes many servings, and thus many cookies. No worries.
Is the oil you brush on the on the cookie sheet from the ingredients or extra?
