Ingredients

  1. 1 cup / 30 gm fresh spinach
  2. 1 medium peach, pitted and sliced
  3. 5 walnuts
  4. ½ lb / 225 gm boiled chicken breast fillet cut into strips (approximately 1 breast)
  5. ⅛ tsp / ⅔ gm red chili flakes
  6. 2 Tbsp / 15 ml grated organic and/or grass-fed cottage cheese
  7. Salt to taste
  8. ½ tsp / ⅔ gm ground black pepper
  9. 4 Tbsp / 60 ml grapefruit juice
  10. 1 tsp / 5 ml olive oil

Directions

  1. For dressing, whisk together grapefruit juice, salt, ground black pepper, red chili flakes, and cottage cheese.
  2. In a bowl, mix together spinach, boiled chicken, peach slices, and walnuts, and transfer to a serving platter.
  3. Just before serving, pour dressing over ingredients on platter and serve

Serving Size: 4 oz / 110 gm chicken

I JUST JOINED AND WAS A LITTLE BIT DISAPPOINTED IN SOME OF THE INGREDIENTS IN THE RECEIPES….I AM ASSUMMING THAT IT IS BECAUSE I AM NOT USE TO USING THAM AND THE SHOPPING LIST IS REALLY LONG….AND I AM NOT SURE HOW TO MAKE THE LENTILS AND KIDNEY BEANS…I LOOKED FOR RECEIPES ON HOW TO USE THEM BUT WASN;T ANY….I AM SURE ONCE I GET USE TO IT IT WILL BE OKAY……ALSO I WAS WONDERING IF I GET E-MAILS SENT TO ME OR IF I HAVE TO GO INTO YOUR SIGHT EACH WEEK MYSELF….THANK YOU….A LOT OF QUESTIONS FOR A NEW BEGINNER…WILMA
